Dessert expert, and founder of Charm Decor, Ameenah Hyman shows you how to make Blackberry Lemon Waffle Cones with Toasted Meringue. And they are healthy too!
1 Cup Blackberries
1⁄4 Cup Heavy Cream
1 Cup Mascarpone Cream Cheese Fresh Lemon Zest
3 Egg Whites 2 Tbls Truvia
Step 1: Combine the heavy cream and mascarpone cheese in mixer. Mix until well blended. Fold in lemon zest. Set aside.
Step 2: Whip egg whites on high in mixer. When it starts to get frothy, slowly add truvia sugar. Continue to whip until glossy. Place meringue in a pastry bag. Set aside.
Step 4: Fill waffle cone with blackberries, cream cheese mixture. Continue to layer until you have reached the top.
Step 5: Take your merigue and swirl it on top of the cone. Using a kitchen blow torch, lightly toast the meringue.
