The St James had a special request of Chef Spike who shared the coveted recipe for a Vim & Victor favorite. If you don’t have the ingredients on hand, sub in tortilla chips and add your own favorite toppings.

|Ingredients1 quart cauliflower, cut into florets1 tbsp turmeric1 tbsp harissaSalt, pepper, EVOOInstructions:Preheat oven to 350 degrees FToss all ingredients togetherLay cauliflower in a single layer on a sheet trayRoast in oven for 10-12 minutes|
|Ingredients:1 serrano chili pepper, seeded and ribs removed½ cup cilantro leaves2 green onions, roughly chopped1 cup sour creamJuice of 2 limes1 tbsp water½ tsp chopped garlicInstructions:Finely chop pepper, cilantro and green onionsAdd remaining items and blend in a food processorAdd kosher salt or extra lime juice to taste|
|Assemble Your Nachos|
|Ingredients:4 cups corn tortilla2 cups roasted cauliflower¼ cup julienned radishesMicro cilantro leaves½ cup grated Cotija cheese¼ cup pomegranate seeds¼ cup pickled jalapenos8oz cheese sauce (combine and heat pepper jack cheese and whole milk)2 oz cilantro cremaInstructions:Heat the corn tortillas and cauliflower in the oven for 2 minutesPlace half the tortillas on a platterLadle half cheese sauce on top of tortillas along with half the cauliflowerRepeat layer againAdd the remaining ingredients to the topGarnish with cilantro|
