The St James had a special request of Chef Spike who shared the coveted recipe for a Vim & Victor favorite. If you don’t have the ingredients on hand, sub in tortilla chips and add your own favorite toppings.

Cauliflower Nachos
Roasted Cauliflower
Ingredients1 quart cauliflower, cut into florets1 tbsp turmeric1 tbsp harissaSalt, pepper, EVOOInstructions:Preheat oven to 350 degrees FToss all ingredients togetherLay cauliflower in a single layer on a sheet trayRoast in oven for 10-12 minutes
Cilantro Crema
Ingredients:1 serrano chili pepper, seeded and ribs removed½ cup cilantro leaves2 green onions, roughly chopped1 cup sour creamJuice of 2 limes1 tbsp water½ tsp chopped garlicInstructions:Finely chop pepper, cilantro and green onionsAdd remaining items and blend in a food processorAdd kosher salt or extra lime juice to taste
Assemble Your Nachos
Ingredients:4 cups corn tortilla2 cups roasted cauliflower¼ cup julienned radishesMicro cilantro leaves½ cup grated Cotija cheese¼ cup pomegranate seeds¼ cup pickled jalapenos8oz cheese sauce (combine and heat pepper jack cheese and whole milk)2 oz cilantro cremaInstructions:Heat the corn tortillas and cauliflower in the oven for 2 minutesPlace half the tortillas on a platterLadle half cheese sauce on top of tortillas along with half the cauliflowerRepeat layer againAdd the remaining ingredients to the topGarnish with cilantro
