“Fruited Pico De Gallo

This fruity take on a traditional Mexican relish is perfect on it’s own with baked tortilla chips or as a delicious “topper” for grilled chicken, fish or shrimp!


2 large tomatoes, diced
2 jalepeno peppers, seeded and diced
1 small red onion, diced
1 medium peach, pit removed and cubed
1 cup of pineapple, diced
1/4 cup of cilantro, finely chopped
Juice one lime, freshly squeezed
1 teaspoon of Kosher Salt (or more for taste)

Blend all ingredients except for lime juice and salt in a medium mixing bowl
Slowly add in lime juice, taste for tartness and flavor
Add in salt, taste for final flavor
