This one-dish meal is great served on it’s own or with a fragrant, slightly nutty brown Basmati rice.

(Serves 2)

Ingredients:

1 pound of boneless, skinless chicken breasts, sliced in half lengthwise
1 medium poblano pepper, seeded and diced
1/2 small red onion, finely chopped
1 large peach, pit removed and sliced
1 tablespoon garlic powder
1 tablespoon smoked paprika
1 teaspoon Kosher Salt
3 tablespoons olive oil

Preparation:
Rub chicken with 1 tablespoon of olive oil and sprinkle evenly with smoked paprika and garlic powder
Add remaining olive oil to medium skillet and heat until surface shimmers
Place chicken in skillet and cook until browned on all sides
Add peppers, onions and peaches. Cook an additional 3-5 minutes.
Remove to serving plates.
